Vegan Dinner: Thai Tempeh Sub

This is an ode to one of my favorite subs from my old college town of Boulder. It is based on the Thai Tempeh sub they have been making for probably 10 years at Half-Fast Subs on the Hill. Every time I make my way up to Bothaisam3ulder, I have to stop in Half-Fast for one of these, and my girlfirend and I finally decided to make it for ourselves.

It includes crumbled up fried tempeh and shredded carrots in peanut sauce, with romaine lettuce and chow mein noodles on french bread. I like some yellow mustard with it too. Came out great!

Vegan Dinner: Jerk Tempeh

Carribean Jerk Tempeh with rice and beans with green peppers. We had this about a week ago after visiting the Savory Spice Shop in Denver for the first time. What a cool place, and why didn’t I know about it before? You can get any spice imaginable (they have a whole wall of curry powders), and it is very inspiring for new dish ideas. This came out a little salty, perhaps due to too much soy sauce in the recipe we used, or maybe marinading too long? I still liked it and can’t wait to give it a second shot. The rice and beans complimented the dish well.
